These no-bake cookies full of gluten-free oats, cacao, and peanut butter are dangerous in the best way. They’re rich, chocolatey, peanut-buttery, and so easy you’ll be making them on repeat.

Some days you just need something sweet. And some days, you just need that cookie as soon as possible! When that feeling hits, these Gluten-Free No-Bake Cookies are one of the recipes I lean on because they come together fast, taste indulgent, while still feeling nourishing.
The process is simple and intentionally unfussy. You start by warming coconut oil, coconut sugar, nut milk, and cacao powder on the stovetop so everything melts into a smooth base.
Once that’s ready, you stir in oats, peanut butter, and a splash of vanilla.


From there, it’s just scooping big spoonfuls onto a baking sheet and letting the fridge do the rest. If you want to drizzle chocolate or sprinkle sea salt, go for it – but honestly, they’re delicious as-is.

Ingredients for Gluten-Free No-Bake Cookies
A short, simple ingredient list is always a good sign – here’s what you’ll need on hand:

- Coconut Oil: This healthy fat binds all the ingredients together.
- Coconut Sugar: Using a more natural form of sugar helps keep blood sugar levels in check. Of course, if you don’t have coconut sugar on hand, then regular white sugar will also work.
- Almond Milk: Feel free to swap in whatever milk you prefer.
- Raw Cacao Powder: Note, this is cacao powder, not cocoa powder. Cacao powder is unprocessed, meaning it contains higher levels of magnesium and nutrients. Cocoa powder is processed and is sweeter because of the addition of refined sugar.
- Salt: A bit of salt always elevates flavors.

How to Make No-Bake Gluten-Free Cookies
To a saucepan, add the coconut oil, coconut sugar, almond milk, raw cacao powder, and salt to a saucepan and bring to a boil. Boil for 1 minute.
Remove from the heat.


Next, add the oats, creamy peanut butter, and vanilla extract.
Drop large spoonfuls onto a parchment-lined cookie sheet. Refrigerate until set, about 20 minutes.
If desired, melt dairy-free chocolate and drizzle each cookie. Sprinkle with sea salt, if using, and enjoy!

Ingredients
- ½ cup coconut oil
- 1 ½ cups coconut sugar
- ½ cup almond milk
- ¼ cup raw cacao powder
- ¼ teaspoon salt
- 3 cups gluten-free rolled oats
- ¾ cups creamy peanut butter
- 2 teaspoons vanilla
- 1 cup chocolate chips (divided)
- 1 teaspoon coconut oil
- Flaky sea salt, for topping
Instructions
- Add the coconut oil, coconut sugar, almond milk, raw cacao powder, and salt to a saucepan and bring to a boil. Boil for 1 minute.
- Remove from the heat.
- Add the oats, creamy peanut butter, and vanilla extract. While the mixture is still warm, sir in ½ cup of chocolate chips.
- Drop large spoonfuls onto a parchment-lined cookie sheet. Refrigerate until set, about 20 minutes.
- Melt the remaining ½ cup of chocolate chips with 1 teaspoon of coconut oil. Drizzle over the top of the cooled cookies and sprinkle with flaky salt. ENJOY!
- Store in the refrigerator.

I love no bake cookies and these taste exactly the same without all the refined sugar! Love! Instead of making them into cookies I just pour into a rectangular pan and slice little squares. So yummy and easy to make!
