If you’ve dabbled in gluten-free baking, you likely have many of these in your pantry. If not, these staples show up again and again in my healthier sweet treats. Here’s what you’ll need.

  • Creamy Almond Butter: Adding nut butter to baked goods boosts nutrition and improves taste and texture. Swap for another nut or seed butter if you like.
  • Maple Syrup and Coconut Sugar: My go-to natural sweeteners for refined-sugar-free treats. Together they give a just-sweet-enough, caramel-like taste.
  • Eggs: I haven’t tried an egg replacement, but a flax egg would likely work.

  • Nut Milk: Unsweetened almond milk is my preference, but any dairy-free or regular milk is fine.
  • Dairy-free Yogurt: Yogurt improves texture and tenderness. I used Cocojune coconut milk yogurt. If you’re not dairy-free, Greek yogurt works and adds more protein.
  • Gluten-free Flour Blend: Light, fluffy gluten-free muffins are tricky, so I rely on a one-to-one blend. Bob’s Red Mill one-to-one always works well.
  • Protein Powder: I love Ritual’s vanilla plant-based protein. Use your favorite.
  • Almond Flour: Alongside the gluten-free blend, almond flour adds nuttiness and keeps muffins from drying out.
  • Baking Powder and Baking Soda: You need both for the right rise and lift.
  • Dairy-Free Chocolate Chips: Add as many as you want. I love Hu for baking and snacking; Ghirardelli dairy-free dark chocolate chips worked perfectly in this batch.

How to Make Chocolate Chip Protein Muffins

First, preheat the oven to 350°F. Grease a muffin tin and set aside. This recipe makes 9 muffins.

In a large mixing bowl, whisk the almond butter, eggs, maple syrup, coconut sugar, nut milk, yogurt, and vanilla until well combined.

Stir in the gluten-free flour, protein powder, baking powder, baking soda, and salt until just combined.

Fold in the chocolate chips. Top the muffins with more chocolate chips.

Add about ⅓ cup of batter to each cup and bake for 23 to 25 minutes, until the outsides are a bit golden and the tops are bouncy.

Cool in the tin for 5 to 10 minutes, then move to a wire rack. Enjoy!

Could I use peanut butter or sunflower seed butter?

Any nut or seed butter should work! Just note that it will change the taste of the muffins depending on what type of nut or seed butter you use.

What protein powder do you use?

I love Ritual protein, but any vanilla or unflavored protein powder will work.

Can I just use almond flour instead of the gluten-free flour blend?

Not for this one. The blend gives these muffins their lift, and the almond flour is already in there for flavor and moisture. All almond flour would make these muffins much denser. Use a 1:1 gluten-free flour blend for the best result.

Storage: Store airtight on the counter for 3–4 days, or in the fridge for up to a week.
To Freeze: Cool completely, wrap individually or store in a freezer-safe bag, and freeze for up to 3 months. Thaw at room temperature or warm from frozen in the microwave for 20–30 seconds.
