From this breakfast recipe list, I’d recommend you try the Hidden Veggie Maple Breakfast Sausages, Chipotle Chorizo Stuffed Sweet Potato, Chicken Breakfast Sausage Skillet (you could use sausages that aren’t chicken), Cinnamon Apple Quinoa Porridge, and the Savory Breakfast Bowls and omit the eggs.
