Crispy Baked Brussel Sprouts

A delicious side that is truly irresistible, these crispy Brussels sprouts are made even better with the addition of smoky bacon!

Brussels sprouts are here to stay. A few years ago, they were considered a “trendy” vegetable making an appearance on nearly every restaurant menu.
Well, I’m here to say that we’re beyond this moment! These Crispy Baked Brussels Sprouts are a great way to eat this yummy veggie any night of the week.
A member of the cruciferous family, Brussels sprouts are a good source of vitamin C and fiber. My favorite way to eat them is roasted. The tender leaves caramelize in the oven, making them unbelievably sweet and tender. I could honestly eat these sprouts directly off the sheet pan.


This recipe is great for those who think they are Brussels sprouts averse. Why? Because bacon is added to the sheet pan as well! The salty, smoky flavor of the bacon is a great complement to the slightly sweet and crispy sprouts.

Ingredients for Oven Roasted Brussels Sprouts
A quick and easy side that requires only five ingredients including salt and pepper — I’m here for it! Here’s what you’ll need.

- Brussels Sprouts: Basically petite cabbage, Brussels sprouts are a nutrient-dense veggie. They are full of vitamin C, vitamin A, and fiber! Look for firm tight heads that are bright green in color.
- Olive Oil: This healthy oil adds a rich flavor and allows the sprouts to crisp up in the oven. Avocado oil will also work.
- Salt and Pepper: Season to taste.
- Bacon: To add a bit of salty, umami flavor, I love to add a few pieces of chopped bacon to the sheet pan to roast up with the Brussels sprouts. You can leave the bacon off to keep this vegetarian and vegan-friendly.

This simple recipe starts with preheating the oven to 425°F.
Next, chop the Brussels sprouts in half and toss them with olive oil to lightly coat along with salt and pepper to taste.


Place the sprouts on a baking sheet, cut-side down. Scatter chopped bacon on top of the Brussels sprouts. To keep this recipe plant-based, omit the bacon.
Bake for 25 minutes, or until golden brown. Serve hot and enjoy!

CRISPY BAKED BRUSSELS SPROUTS

Ingredients
- 1 pound Brussel sprouts, halved
- 1 tablespoon olive oil (just enough to lightly coat your sprouts – see notes)
- ½ teaspoon sea salt
- ½ teaspoon fresh cracked pepper
- 3 slices bacon (or omit for plant-based)
Instructions
- Preheat your oven to 425°F.
- Toss your halved Brussels sprouts with olive oil to lightly coat, salt, and pepper.
- Place your sprouts on a baking sheet, cut-side down. Keeping them cut-side down ensures maximum crispiness!
- If using bacon, scatter chopped bacon on top of the Brussels sprouts.
- Bake for 25 minutes, or until golden brown and the bacon is crispy. Serve hot and enjoy!
Notes
- You may want to check your sprouts around 22 minutes. Some oven cook hotter than others and therefore your sprouts may begin to brown earlier than the 25 minute mark.
- I try to use just enough oil to coat the sprouts without using too much. I find that they crisp up better with a “less is more” approach to oil.
- A lot of recipes call for flipping the sprouts halfway through. I find this step unnecessary so I have omitted it from this recipe.
