Let’s talk about a recipe that I make daily, sometimes multiple times a day — Honey Matcha Latte

In 2022, I decided to do a one-month experiment and trade in my daily double espresso latte for a matcha latte. The main reason for this test was because I learned my coffee habit was spiking my cortisol and taxing my adrenals. 

Now, I’m not going to say that the experiment was a piece of cake but I’m a converted matcha girlie now! The first few weeks, I craved coffee and the intense burst of energy I would get after my first sip. 

However, after the first month, I noticed I was able to focus better and had less jitters and overall anxiety. I also grew to love the gradual progression of energy that comes with matcha.

You may be reading this and thinking, “There’s no way I can give up coffee!” and I completely understand.

Having a morning beverage is truly a ritual and I’d never thought that over 1 ½ years later I’d still consider matcha to be my ride-or-die drink of choice.

Ultimately, you’re looking for a bright green color that is smooth in texture and consistency. 
  • Cold Water
  • Honey: Manuka honey is preferable since it has so many anti-inflammatory, gut-nourishing properties
  • Nut Milk: The main reason why I make my Creamy Vanilla Cashew Milk is for this latte! Use your milk of choice here.

Step by Step Instructions for Honey Matcha Latte

If you have a matcha kit, go ahead and get that set up. If not, take out a small glass or bowl and fill it with cold water. 

Spoon the matcha powder through a fish mesh sieve, breaking up any clumps. This leads to an ultra-smooth drink. 

Using a matcha bamboo whisk, froth the matcha back and forth until it’s slightly frothy on top. 

Add in the honey and whisk again until it’s incorporated. 

Add ice to your serving glass of choice. Pour in the cashew milk and top with the honey matcha mixture. Stir with a straw and enjoy!

Anytime I show myself drinking a matcha, I’m asked a lot of questions. Here are the most popular ones. 

Would this same recipe work for hot matcha? 

Yes! I prefer an iced matcha, no matter the season. But a few of my friends use this simple recipe and enjoy it warm. Just be sure the water isn’t boiling as that can scald the taste of the matcha tea leaves. See notes below for instructions. 

What’s a good alternative to cashew milk?

Any type of nut milk would be fine – almond, coconut, or even pistachio are all great options. If you’re not dairy-free, you can use regular milk or cream too. 

What are the benefits of matcha? 

Matcha is full of antioxidants! It can help with cognitive function, inflammation, and metabolism. It also contains L-theanine, which is an amino acid known to help promote relaxation, reduce stress, and lessen anxiety. It still contains caffeine, but it’s significantly less than a cup of coffee. The L-theanine also helps control the absorption of caffeine, meaning you’re less likely to get that jittery feeling from it. 

Why did you switch from coffee to matcha? 

For me, I realized that coffee was spiking my cortisol and adrenal levels. I was shaky, anxious, and pretty jittery. I still craved a morning beverage but I didn’t like the way I felt after having my double espresso latte. After the first month, I actually stopped liking the taste of coffee altogether. It’s like my taste buds went through a reset of sorts and now I crave matcha daily. 

What’s the best matcha? 

Just like coffee, matcha is a matter of preference. Typically, you’ll want to look for a ceremonial grade matcha as opposed to a culinary matcha. Ceremonial matcha is a higher-quality matcha powder made from the youngest tea leaves. It boasts a higher nutrient profile and tends to be a brighter green color. Culinary matcha is best reserved for when you want to cook or bake with it. Ingredients 

  • 1 teaspoon matcha powder
  • 3 ounces cold water
  • ½ – 1 tsp honey (I like Manukora Manuka Honey)
  • cup creamy vanilla cashew milk

Instructions 

  • Add the water to a small glass or bowl.
  • Spoon the matcha powder through a fish mesh sieve to break up any clumps.
  • Whisk in a front to back motion until slightly frothy on top.
  • Add the honey and whisk again.
  • Add ice to your serving glass.
  • Pour in the cashew milk and top with your honey matcha mixture.
  • Enjoy!

Notes

I’m an iced matcha lover, but you can also make this a hot matcha latte. 
To enjoy this hot, heat the water in a teapot on the stove until warm. The ideal water temperature is between 140° to 175°, anything hotter and you’ll actually scald the matcha powder. Follow the same directions as above, omitting the ice cubes. Warm your milk over the stove before adding it into a mug and pouring the matcha mixture over the top. Use a whisk or handheld frother to incorporate.
