Freshly-made watermelon juice infused with lime and honey is the star in this cooler cocktail recipe. Paired with gin, mint, and cucumber slices, this will be your new favorite summer drink.

Is there anything more refreshing than watermelon on a hot summer day? Once I learned that I could make and store fresh watermelon juice in my fridge, I started looking for creative ways to enjoy it.
This Watermelon Cucumber Cooler Cocktail is one of my favorite ways to enjoy this melon all season long.
Freshly made watermelon juice is strained and shaken with lime, fresh mint, gin, and plenty of ice.
The result is a vibrant, super refreshing drink that goes down very easily on a hot summer evening.
Garnish with a few mint sprigs, a watermelon wedge, and a lime and salt rim for the best sip. Enjoy!
Ingredients for Watermelon Cucumber Cocktail
Make sure your bar is stocked with these ingredients for the perfect summer must-have cocktail.

- Watermelon: Obviously our key ingredient here!
- Lime: Freshly squeezed lime juice adds the right amount of acidity. Lime zest makes for a pretty garnish around the glass rim.
- Honey: A bit of sweetness is always welcome in a summery drink. Add more or less honey depending on preference.

Pin It- Gin: I used Empress 1908 Indigo Gin for this recipe, which is infused with butterfly pea blossoms, making it a beautiful natural indigo hue. Use your favorite variety of gin, or replace it with sparkling water for an alcohol-free rendition.
- Cucumber: A few thin slices of cucumber have become a trendy addition to many gin-based drinks. It complements the botanical note of the gin and adds another refreshing component too.
- Mint: The addition of mint gives the drink additional fresh flavor.
Step-by-Step Instructions for Watermelon Cucumber Cooler
Make the watermelon juice
To make the watermelon juice, add all of the juice ingredients (cubed watermelon, lime juice, honey, and salt) to a blender and blend on medium for about 30 seconds until smooth.


Strain the mixture in a large bowl through a fine mesh sieve, then pour into a serving glass.
Recipe Tip
You can make the watermelon juice ahead of time. Store in a glass container in the fridge for up to four days.
Make the cocktail
Add the cucumber slices and mint leaves to a cocktail shaker. Muddle until the cucumber gives little to no resistance.
Add the watermelon juice and gin to the cocktail shaker along with a scoop of ice. Shake vigorously.


Prepare the glass by mixing the lime zest and salt in a low dish, running a lime wedge over the rim of your glass, and rolling the rim in the zest and salt mixture. Add ice.
Pour the drink over ice and garnish with a watermelon wedge and a sprig of mint.

WATERMELON CUCUMBER COOLER COCKTAIL

Ingredients
For the Watermelon Juice:
- 8 cups watermelon, cubed
- ¼ cup lime juice
- 3 tablespoons honey
- Pinch of salt
For the Cocktail (makes 1):
- 3 ounces watermelon juice
- 4-5 cucumber coins
- 6 mint leaves
- 2 ounces gin
For Garnish:
- ⅛ teaspoon lime zest
- 1 teaspoon kosher salt
- Thin watermelon wedges
- Sprigs of fresh mint
